  • - 16 oz. penne pasta
  • - 2 chicken breasts
  • - 1 tbsp. oil
  • - 2 tsp olive oil
  • - 2 tbsp. unsalted butter
  • - Cajun seasoning
  • - Salt
  • - Ground black pepper
  • - Heavy cream
  • - Diced tomatoes
  • - Parmesan cheese

Instructions
 

  • Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken breasts and cook until they're golden and cooked through, about 6-8 minutes.
  • Once the chicken is cooked, lower the heat to medium and add the unsalted butter. Allow it to melt, then stir in the Cajun seasoning, salt, and black pepper.
  • Add the diced tomatoes to the skillet, mixing everything together. Let it cook for a couple of minutes to combine the flavors.
  • Pour in the heavy cream and stir to combine. Heat the mixture on low until the sauce thickens, making sure not to bring it to a boil.
  • Add the cooked penne pasta to the skillet, tossing it gently to coat the pasta with the creamy sauce. Serve warm, topped with grated Parmesan cheese.
