Curd Recipe Desserts

Ingredients
  

  • - 1/2 cup lemon juice
  • - 1/2 cup sugar
  • - 3 eggs
  • - 6 Tablespoons unsalted butter melted
  • - 4 tsp lemon zest
  • - 1 ½ cups all-purpose flour
  • - ½ cup granulated sugar
  • - ½ tsp baking powder
  • - ¼ tsp salt
  • - ½ cup butter room temperature
  • - 16 oz block cream cheese room temperature
  • - 2 cups powdered sugar
  • - 2 Tbsp lemon juice for cream cheese layer
  • - 1 cup heavy whipping cream
  • - ¼ cup powdered sugar for whipped cream

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit. In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Add the room temperature butter and mix until the dough is crumbly.
  • Press the dough into the bottom of a lightly greased 13×9-inch baking dish. Bake for 20 to 25 minutes or until golden brown. Once baked, allow it to cool completely.
  • While the crust is cooling, prepare the lemon curd. In a saucepan, combine lemon juice, sugar, eggs, and melted butter. Cook over low to medium heat, stirring constantly until the mixture thickens.
  • Once thickened, remove the curd from the heat. If desired, add additional lemon zest for a more intense flavor. Allow the lemon curd to cool before layering.
  • For the cream cheese layer, beat the cream cheese in a mixing bowl until light and fluffy. Gradually add powdered sugar and lemon juice, mixing until smooth.
  • In a separate bowl, whip the heavy cream with powdered sugar until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
  • To assemble, spread the lemon curd over the cooled crust, followed by the cream cheese layer. Chill the assembled dessert in the refrigerator for at least 2 hours before serving.
  • Serve chilled and enjoy! Optionally, garnish with fresh blueberries or additional lemon zest for added flavor and presentation.
  • As you create this dessert, remember that the texture of the lemon curd should be smooth and glossy, without any graininess. If it seems too sweet, you can adjust the sugar levels in the curd or cream cheese layers to achieve your desired balance of flavors.
