Ingredients

  • - 3-4 medium-sized apples about 250g/9oz
  • - ½ to 2 cups granulated sugar or low-calorie sweetener
  • - 2-3 large eggs or egg substitute
  • - 1 to 3 cups all-purpose flour
  • - 1 teaspoon vanilla extract
  • - 1 teaspoon cinnamon
  • - 1 teaspoon baking powder
  • - ½ teaspoon baking soda
  • - ½ teaspoon salt
  • - ½ cup chopped walnuts optional

Instructions

  • Preheat your oven to 350°F/180°C. Grease and flour a springform pan or a Bundt pan to prepare for the batter.
  • In a large mixing bowl, combine the eggs and sweetener until well blended. Stir in the vanilla extract and any additional wet ingredients you're using, such as yogurt.
  • In a separate bowl, mix together the flour, baking powder, baking soda, cinnamon, and salt. Verify that the dry ingredients are evenly combined.
  • Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
  • Chop the apples into small pieces and fold them into the batter, along with any optional nuts like walnuts.
  • Pour the batter into the prepared pan and spread it evenly. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the cake from the oven and let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely. If desired, glaze with apricot or lemon jam for added flavor.
