In a large skillet, heat the olive oil or butter over medium heat. Once hot, add the ground beef to the skillet, breaking it apart with a spatula as it cooks. Season the beef with garlic powder, onion powder, cayenne pepper, salt, and pepper. Cook until browned and fully cooked through, about 7-10 minutes.
While the beef is cooking, prepare the vegetables. Once the beef is browned, add the broccoli, zucchini, and bell peppers to the skillet. Stir to combine and cook for an additional 5-7 minutes, or until the vegetables are tender and slightly crisp.
Once the vegetables are cooked, sprinkle the shredded cheddar cheese over the top of the beef and vegetable mixture. Cover the skillet with a lid and let it cook for another 2-3 minutes, or until the cheese is melted and bubbly.
Remove from heat and serve hot. You can enjoy this dish on its own or serve it over a bed of lettuce or cauliflower rice for a complete meal.
